Shakshouka with Paneer (Paneer Shakshuka)
Shakshouka is a dish of eggs poached in tomato sauce with peppers, onion and garlic, and spices. It is notably a staple food in North Africa.
I have shared the original version of Shakshuka as well as the Ful medames Shakshouka earlier, both delicious ,heartwarming comfort foods and brunch-type-of recipes.
Today I have changed it up a bit, adding the irresistible Indian Cottage cheese; Paneer, to give it a different texture and flavour altogether. So yummy, and this one can even be served with flat-breads for dinner. Although I am a sucker for some yummy toasted Garlic Bread for any type of Shakshouka:)

How to make Shakshouka with Paneer (Paneer Shakshuka) Recipe at a glance:
- Saute Onion and Garlic.
- Add chopped tomato and pre-cooked or canned cannellini beans and cook down.
- Add spice and herb mixture and Paneer. Cook a while.
- Place cracked eggs into indents in the thickened and seasoned sauce.
- Cover and cook, just till eggs are soft set. Garnish.

Ingredients:
- 1 Red Onion, chopped
- 1 tsp Ginger-Garlic paste
- 1 1/2 cups canned chopped tomatoes (Polpa) or use very ripe fresh tomatoes, chopped
- 1 can (450 gms) Cooked Cannelini Beans(Plain unslated)
- 350 gms fresh Paneer cubes
- 1 tsp Ras el Hanout Spice Mix – see notes
- 1-2 tsp Gourmet Sabzi (mixed dried herbs- see notes)
- 1/2- 1 tsp mild Chilli powder
- 3-4 Eggs
- 3-4 Tbsp Oil
- Chopped Coriander, to garnish
- Salt to taste
